We're usually pretty no-nonsense about breakfast around here. Isaac and Silas both wake up famished, and while the rest of us don't care much when or what happens, we still try to make it to the table fairly quickly in the mornings. Mondays and Thursdays are oatmeal, Tuesdays are pancakes, Wednesdays are waffles (which we make in big batches once a month or so and freeze, so that if we're running late to Bible study we can eat in the car).
But on Saturdays, if there's nowhere to be, I love making crepes. I don't do it often enough to be an expert, but this morning, at long last, I only ripped one crepe out of the whole dozen or so, so I thought it was high time I share my beloved breakfast! (I should have taken pictures, but I didn't.)
I start with this whole-wheat crepe recipe. While the batter rests, I cook down a blueberry compote of sorts: bring 2 cups blueberries (organic, if you can, they're high in pesticide residue) and 1/4 cup-ish (I never measure anymore) of water to boil. Cover and simmer for about five minutes. Meanwhile, combine about a tablespoon each of sucanat and arrowroot powder (or sugar and cornstarch, if that's what's on hand). After the few minutes of simmering, stir the sugar/cornstarch mixture into the blueberries and stir until it thickens up.
By this time, your crepe batter should be ready to go. Give it one more blender pulse if it seems like the flour has settled to the bottom. (The recipe doesn't say that, but it always happens to me.) Start making crepes! (The recipe I linked to has specific instructions, so I won't repeat them here. Just know that you WILL rip most of them until you get the hang of it. But kids don't care about ripped crepes, and mastering them will be only for your pleasure, not theirs.)
I assemble and plate crepes as soon as they come out of the pan and serve the three big boys first. By the time Isaac's done cutting them up, I have one ready for him. I eat my own standing at the counter while I keep making more, but it's worth it. :) The assembly: strip of blueberry sauce down the center third, handful of chocolate chips on top of that, fold both sides over, squirt or dollop whipped cream on top. (I've tried making my own with the cream from our raw milk, but without much success. Isaac loves his Reddi Whip, so we splurge.)
If you really want a treat, smash up some cream cheese with a little maple syrup for a creamy filling. I'm the only person in the house who likes cream cheese, so it's my own personal splurge.
I splurged three times this morning. :)
