One of the blogs I follow, Keeper of the Home, recently started a "weekend links" series in which she re-caps her week. I thought it sounded fun. One of my goals for this year is to get back to reading more (you know, instead of checking Facebook and Pinterest endlessly), and I'm hoping this will hold me accountable to keep reading. Also, people are always asking me what kinds of things I'm doing in the kitchen (so random), so this will be your glimpse inside my meal plans (or lack thereof, sometimes). Without further ado:
What I'm Reading
The Debt: The Story of a Past Redeemed by Angela Hunt. Got this one from the church library and read it in two days over the holidays. Fairly cheesy and predictable, but still a good reminder for this homebody of a girl that there is a world outside of the church walls.
Standing on the Promises by Douglas Wilson. This is a re-read for me from several years ago, and I'm only two chapters into it this time around. With Levi starting to understand more and more that obedience and discipline are not entirely arbitrary, there are reasons behind what we do, I'm feeling like I need a good dose of biblical child-rearing wisdom.
What I'm Cooking
Lasagna. Nothing fancy, just the recipe off the box. I split it in half and make it in two loaf pans with the half-size noodles from Barilla. At this point, that's still enough to feed us, with one small leftover piece for a future lunch.
Skinny Texas Cheese Fries. Friday night date-dinner (after the kids go to bed).
Healthy Breakfast Hash . . . except we'll have it for lunch. Mostly just because I had a small portion of hashbrowns in the freezer and a handful of baby spinach wilting in the fridge.
Smoothies for breakfast! Week one of my new "smoothie Saturday" plan for 2013. Not all of us (read: the grown-ups) are convinced that one can feel adequately full from a liquid. We shall see!
(Short list today because we spent half the week in Indianapolis with my best friend from college for New Year's Eve. Lots of yummy food links coming up in that (yet-to-be-written) post, though!)
What I'm Creating
A toy box from an old diaper box and a roll of patterned duck tape (penguins, to be exact). There are lots of cute tutorials out there on sewing liners for diaper boxes. But I don't sew and I don't have fabric just lying around and this took me approximately five minutes instead of . . . well, however long it would take to measure and sew. Never mind the strip of green still visible at the bottom. Be advised that it takes just slightly more than one roll of duck tape to completely cover the box.
