With apologies for being a day late . . .
What I'm Cooking:
Cheesy beef and rice. One of Levi's favorite meals; he asks for it regularly. It's been a while since I made it last, though.
Tacos. I make a batch of the recipe out of Dinner's in the Freezer, and a batch of these lentil tacos, and then I combine them and divide into meal-sized portions to keep in the freezer. Most of the time I like to have it on a bed of tortilla chips and raw kale, but we were out of chips so we used whole wheat soft flour tortillas instead.
Roasted potatoes, chicken sausage, and peppers, which has recently become one of my favorite meals (only I use one yellow and one green pepper instead of red, as I don't prefer red peppers). It's such a shame that good chicken sausage (as in, without MSG or added nitrites) is so expensive.
What I'm Reading:
Technically, I'm still reading Standing on the Promises, but it hasn't seen much action this week.
The Reluctant Prophet, by T. Davis Bunn. This is actually two books combined into one: The Warning and The Ultimatum. It was another random grab from the church library. Lots of financial and political jargon that I skim over, but the story itself is interesting.
What I'm Doing:
Fighting the flu. Levi woke up with a fever on Thursday morning, and by Friday morning it had been high enough for long enough that when I took Silas in for his flu shot booster, I asked the nurse about it. The pediatrician asked to see him that afternoon, so we carted the whole family out to Mason (as our pediatrician is only in our neck of the woods on Tuesdays and Thursdays). He tested positive for the real flu -- you know, the one they give the flu shot for . . . only Levi didn't get a flu shot. Owen did, and he's been fine, but as Silas didn't get his booster shot [they administer it in two doses for the under-one-year-old crowd] until after Levi got sick, he's now quite the sick little baby. I'm pretty sure I have it myself, though I haven't been to the doctor.
Turns out Silas also has an ear infection, so he's supposed to be on both the tamiflu (which Levi has been taking, and I do think it's made a big difference) and amoxycillin. But the same kid who has always gagged on and refused a bottle, and then the spoon, spits out most of the medicine and then throws up all over me every time I try to give him any. I used garlic oil on Owen once when he was just starting to get an ear infection and it seemed to help, so I might just give that a try again. (Not that garlic oil recipe, though -- that takes ten days, which I don't have. I'll just steep some cloves in olive oil and then strain.)
The fun never ends. :)
